Ingredients:

  • 1 lb (450g) breakfast sausage (pork or turkey)
  • 2 tablespoons butter (optional, for extra richness)
  • 1/4 cup all-purpose flour (or almond flour for low-carb)
  • 2 1/2 cups milk (or heavy cream for keto)
  • 1/2 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper (or to taste)
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)

Instructions:

  1. Cook the sausage: In a large skillet over medium heat, cook the sausage until browned and crumbled. Do not drain all the fat—leave about 2 tablespoons for flavor.
  2. Make the roux: Add butter (if using) and stir in the flour. Cook for 1 minute, stirring constantly.
  3. Add milk: Slowly pour in the milk (or cream), stirring continuously to avoid lumps.
  4. Season: Add salt, black pepper, garlic powder, and onion powder. Stir well.
  5. Simmer: Let the gravy cook for 5-7 minutes, stirring occasionally, until thickened. If it’s too thick, add a little more milk.
  6. Serve: Pour over warm biscuits, toast, or mashed cauliflower for a keto option.

👉 Make it keto-friendly: Use almond flour instead of all-purpose flour and replace milk with heavy cream + water.
