Corned Beef Hash Recipe
Ingredients:
- 2 cups cooked corned beef, diced
- 2 cups potatoes, diced (Yukon Gold or Russet)
- ½ cup onion, finely chopped
- ½ cup bell pepper, diced (optional)
- 2 tbsp butter (or oil)
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
- 2 tbsp fresh parsley, chopped (optional)
- 2-4 eggs (optional, for serving)
Instructions:
- Parboil the potatoes (optional but recommended for crispiness):
- Bring a pot of water to a boil, add diced potatoes, and cook for 5 minutes. Drain and set aside.
- Sauté the onion & peppers:
- Heat butter in a skillet over medium heat. Add onions and bell peppers, cooking until soft (about 3 minutes).
- Crisp the potatoes:
- Add potatoes, season with garlic powder, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until crispy.
- Add corned beef:
- Stir in the diced corned beef and press everything down into the pan. Let it cook undisturbed for 3-4 minutes to get crispy. Flip and repeat.
- Serve hot:
