Ingredients:

  • 12 large mushrooms (white or cremini)
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1/4 cup Breadcrumbs (panko or regular)
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp Cream cheese (optional for extra creaminess)
  • 2 tbsp Fresh parsley, chopped
  • 1/2 tsp Dried oregano or Italian seasoning
  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prepare the mushrooms: Gently remove the stems and finely chop them. Set the mushroom caps aside.
  3. Sauté the filling: Heat olive oil in a pan over medium heat. Add the chopped mushroom stems and garlic, cooking until soft (about 3-4 minutes).
  4. Mix the stuffing: In a bowl, combine the cooked mushroom stems, breadcrumbs, Parmesan, cream cheese (if using), parsley, oregano, salt, and pepper. Mix well.
  5. Stuff the mushrooms: Spoon the filling into each mushroom cap, pressing gently to pack it in.
  6. Bake: Place the stuffed mushrooms on a baking sheet and bake for 15-20 minutes, until the tops are golden and the mushrooms are tender.
  7. Serve warm and enjoy!
