Rhubarb Muffins Recipe

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup rhubarb, diced (fresh or frozen)
  • ½ cup milk (or buttermilk)
  • ⅓ cup vegetable oil (or melted butter)
  • 1 large egg
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
  2. In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix milk, oil, egg, and vanilla until smooth.
  4. Gently fold wet ingredients into dry ingredients until just combined (don’t overmix!).
  5. Stir in diced rhubarb.
  6. Fill muffin cups about ¾ full with batter.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool for a few minutes, then enjoy warm or at room temperature!
