Potato Pancakes Recipe

Ingredients:

  • 2 lbs potatoes (Russet or Yukon Gold)
  • ½ onion, grated
  • 2 eggs, beaten

  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)

Instructions:

  1. Grate the potatoes using a box grater or food processor. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Mix the batter: In a large bowl, combine grated potatoes, grated onion, eggs, flour, salt, pepper, garlic powder, and baking powder. Stir well.
  3. Heat oil: In a large skillet, heat about ¼ inch of oil over medium-high heat.
  4. Form pancakes: Scoop about 2 tablespoons of the mixture, flatten into a patty, and carefully place in the hot oil.
