Ingredients:

Tofu:

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 tbsp cornstarch (for crispiness)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

Sauce:

  • 1 tbsp vegan butter (or olive oil)
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional, for spice)
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup canned coconut milk (or cashew cream for extra richness)
  • ½ cup vegetable broth
  • ¼ cup nutritional yeast (for a cheesy flavor)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 2 cups fresh spinach (optional, for extra greens)

Serving:

  • Fresh basil, for garnish
  • Vegan parmesan (optional)
  • Cooked pasta, rice, or mashed potatoes

Instructions:

1️⃣ Prepare the Tofu:

  • Press the tofu to remove excess moisture, then cut it into cubes.
  • Toss the tofu cubes with cornstarch, salt, black pepper, and garlic powder.
  • Heat olive oil in a skillet over medium-high heat and pan-fry the tofu until golden and crispy (about 5-7 minutes). Remove from the pan and set aside.

2️⃣ Make the Sauce:

  • In the same pan, melt the vegan butter and sauté the garlic and red pepper flakes for 30 seconds.
  • Add sun-dried tomatoes, coconut milk, vegetable broth, oregano, basil, and nutritional yeast. Stir well and let simmer for 5 minutes until slightly thickened.
  • (Optional) Add spinach and stir until wilted.

3️⃣ Combine & Serve:

  • Return the crispy tofu to the pan and coat it in the sauce. Let it simmer for 2 more minutes.
