Ingredients:
- 1 medium head cauliflower, cut into bite-sized florets (~4 cups)
- 1 cup heavy cream
- 1 ½ cups shredded cheddar cheese 🧀
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 oz cream cheese (softened)
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika (optional)
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp butter
- ½ cup crushed pork rinds or almond flour (for topping, optional)
Instructions:
1️⃣ Preheat & Prepare Cauliflower:
- Preheat oven to 375°F (190°C).
- Steam or boil cauliflower for 5 minutes until just fork-tender.
- Drain well and pat dry (to avoid a watery sauce).
2️⃣ Make the Cheese Sauce:
- In a saucepan, heat heavy cream over medium heat until warm.
- Stir in cream cheese, cheddar, mozzarella, and Parmesan, mixing until melted.
- Add Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.
3️⃣ Assemble & Bake:
- Toss cauliflower with the cheese sauce and pour into a greased baking dish.
- Melt butter and mix with crushed pork rinds (or almond flour).
- Sprinkle over the top and bake for 10-15 minutes until golden and bubbly.
4️⃣ Serve & Enjoy!
- Garnish with extra cheese or chopped parsley.
