Ingredients:

  • 1 medium head cauliflower, cut into bite-sized florets (~4 cups)
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese 🧀
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 oz cream cheese (softened)
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter
  • ½ cup crushed pork rinds or almond flour (for topping, optional)

Instructions:

1️⃣ Preheat & Prepare Cauliflower:

  • Preheat oven to 375°F (190°C).
  • Steam or boil cauliflower for 5 minutes until just fork-tender.
  • Drain well and pat dry (to avoid a watery sauce).

2️⃣ Make the Cheese Sauce:

  • In a saucepan, heat heavy cream over medium heat until warm.
  • Stir in cream cheese, cheddar, mozzarella, and Parmesan, mixing until melted.
  • Add Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

3️⃣ Assemble & Bake:

  • Toss cauliflower with the cheese sauce and pour into a greased baking dish.
  • Melt butter and mix with crushed pork rinds (or almond flour).
  • Sprinkle over the top and bake for 10-15 minutes until golden and bubbly.

4️⃣ Serve & Enjoy!

  • Garnish with extra cheese or chopped parsley.
