Ingredients:

For the Chicken:

  • 1 ½ lbs (700g) chicken thighs, drumsticks, or tenders
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper (optional, for heat)

For the Coating:

  • 1 cup almond flour
  • ½ cup grated parmesan cheese
  • 1 tsp baking powder (for extra crispiness)
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Egg Wash:

  • 2 large eggs
  • 2 tbsp heavy cream

For Frying:

  • 1 cup avocado oil (or coconut oil)

Instructions:

1️⃣ Prepare the Chicken:

  • Pat the chicken dry with paper towels.
  • Season with salt, pepper, garlic powder, paprika, onion powder, and cayenne.

2️⃣ Set Up the Breading Station:

  • In one bowl, whisk together eggs and heavy cream.
  • In another bowl, mix almond flour, parmesan, baking powder, paprika, salt, and black pepper.

3️⃣ Coat the Chicken:

  • Dip each piece of chicken into the egg wash, then coat it in the almond flour mixture, pressing lightly to stick.
  • Place coated chicken on a wire rack and let it sit for 5-10 minutes (this helps the breading adhere).

4️⃣ Fry Until Crispy:

  • Heat avocado oil in a deep skillet over medium heat (about 350°F/175°C).
  • Fry chicken in batches for 5-7 minutes per side, until golden brown and cooked through (internal temp 165°F/75°C).
  • Drain on a paper towel-lined plate.
