Ingredients:
For the Meatballs:
- 1 lb (450g) ground beef (or a mix of beef and pork)
- ¼ cup grated parmesan cheese
- ¼ cup almond flour (or breadcrumbs if not low-carb)
- 1 egg
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- ½ tsp onion powder
- ½ tsp red pepper flakes (optional, for heat)
- 1 tbsp fresh parsley, chopped
For the Garlic Butter Sauce:
- 3 tbsp butter
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- ½ cup chicken broth
- 1 tbsp lemon juice
- 2 tbsp heavy cream (optional, for a creamier sauce)
- Fresh parsley, for garnish
Instructions:
1️⃣ Make the Meatballs:
- In a large bowl, mix all the meatball ingredients until well combined.
- Roll into small meatballs (about 1 inch in size).
2️⃣ Cook the Meatballs:
- Heat a large skillet over medium heat and add a little oil.
- Sear the meatballs for 4-5 minutes per side until browned and cooked through.
- Remove from the skillet and set aside.
3️⃣ Make the Garlic Butter Sauce:
- In the same skillet, melt the butter and add the minced garlic. Sauté for about 30 seconds until fragrant.
- Stir in the red pepper flakes, chicken broth, and lemon juice. Simmer for 2-3 minutes.
