These Garlic Butter Meatballs are juicy, flavorful, and smothered in a rich, garlicky butter sauce. They’re perfect for a low-carb meal, served over zucchini noodles, mashed cauliflower, or even on their own as a delicious appetizer!


Ingredients:

For the Meatballs:

  • 1 lb (450g) ground beef (or a mix of beef and pork)
  • ¼ cup grated parmesan cheese
  • ¼ cup almond flour (or breadcrumbs if not low-carb)
  • 1 egg
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tbsp fresh parsley, chopped

For the Garlic Butter Sauce:

  • 3 tbsp butter
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup chicken broth
  • 1 tbsp lemon juice
  • 2 tbsp heavy cream (optional, for a creamier sauce)
  • Fresh parsley, for garnish

Instructions:

1️⃣ Make the Meatballs:

  • In a large bowl, mix all the meatball ingredients until well combined.
  • Roll into small meatballs (about 1 inch in size).

2️⃣ Cook the Meatballs:

  • Heat a large skillet over medium heat and add a little oil.
  • Sear the meatballs for 4-5 minutes per side until browned and cooked through.
  • Remove from the skillet and set aside.

3️⃣ Make the Garlic Butter Sauce:

  • In the same skillet, melt the butter and add the minced garlic. Sauté for about 30 seconds until fragrant.
  • Stir in the red pepper flakes, chicken broth, and lemon juice. Simmer for 2-3 minutes.
  • (Optional) Add heavy cream for a richer, creamier sauce.

4️⃣ Combine & Serve:

  • Return the meatballs to the skillet and coat them in the sauce.
  • Garnish with fresh parsley and serve warm.
