Before you preheat the oven, check out our fluffy Homemade Waffle Recipe for tomorrow’s brunch and this make-ahead Overnight Breakfast Casserole to feed a crowd. Curious why super-ripe bananas create such tender crumbs? The answer lies in the starch-to-sugar magic described in Healthline’s guide to the benefits of bananas. Now, let’s bake!

Ingredients:

  • 3 ripe bananas (mashed)
  • 1/2 cup (1 stick) melted butter or coconut oil
  • 3/4 cup sugar (or a sugar substitute)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour (or almond flour for a low-carb version)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas in a large bowl. Add melted butter and mix.
  3. Add sugar, egg, and vanilla and stir well.
  4. Mix in baking soda, salt, and flour until just combined (don’t overmix).
  5. Pour batter into the loaf pan and spread evenly.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Let cool before slicing. Enjoy!

👉 Optional Add-ins: Chopped nuts, chocolate chips, or cinnamon for extra flavor!
