  • 1 ½ cups (180g) almond flour (ground almonds)
  • ½ cup (60g) all-purpose flour (or a gluten-free blend)
  • 1 teaspoon baking powder

  • ½ teaspoon salt
  • ¾ cup (150g) coconut sugar (or regular sugar)
  • 3 large eggs (or flax eggs for a vegan option*)
  • ½ cup (120ml) almond milk (or any plant-based milk)
  • ⅓ cup (80ml) coconut oil or olive oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional, for extra almond flavor)
  • 1 cup (125g) fresh or frozen raspberries (do not thaw if frozen)
  • ¼ cup (25g) sliced almonds (for topping)

🔥 Instructions

  1. Preheat Oven & Prepare Pan – Preheat oven to 175°C (350°F). Grease and line an 8-inch (20cm) cake pan with parchment paper.
  2. Mix Dry Ingredients – In a bowl, whisk together almond flour, all-purpose flour, baking powder, baking soda, salt, and sugar.
  3. Mix Wet Ingredients – In a separate bowl, whisk eggs, almond milk, coconut oil, vanilla extract, and almond extract until smooth.
