Corned Beef Hash Recipe

Ingredients:

  • 2 cups cooked corned beef, diced
  • 2 cups potatoes, diced (Yukon Gold or Russet)
  • ½ cup onion, finely chopped
  • ½ cup bell pepper, diced (optional)
  • 2 tbsp butter (or oil)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)
  • 2-4 eggs (optional, for serving)

Instructions:

  1. Parboil the potatoes (optional but recommended for crispiness):
    • Bring a pot of water to a boil, add diced potatoes, and cook for 5 minutes. Drain and set aside.
  2. Sauté the onion & peppers:
    • Heat butter in a skillet over medium heat. Add onions and bell peppers, cooking until soft (about 3 minutes).
  3. Crisp the potatoes:
    • Add potatoes, season with garlic powder, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until crispy.
  4. Add corned beef:
    • Stir in the diced corned beef and press everything down into the pan. Let it cook undisturbed for 3-4 minutes to get crispy. Flip and repeat.
  5. Serve hot:
    • Top with fresh parsley and serve as-is, or add a fried or poached egg on top for extra richness!
