These crispy, spiced cauliflower pakoras are a delicious Indian snack, perfect for tea-time or as a party appetizer. They are naturally gluten-free since they’re made with chickpea flour (besan) and are completely vegan too!

🌿 Ingredients (Serves 4-6)

For the Batter:

  • 1 cup chickpea flour (besan)
  • ¼ cup rice flour (for extra crispiness)
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ teaspoon salt
  • 1 teaspoon grated ginger
  • ½ teaspoon carom seeds (ajwain) (optional, helps digestion)
  • ¾ cup water (adjust for a smooth batter)

For Frying:

  • 1 small cauliflower, cut into bite-sized florets
  • Oil, for deep frying (use vegetable, sunflower, or coconut oil)

For Garnish & Serving:

  • Chopped coriander leaves
  • Chaat masala (optional, for extra zing)
  • Lemon wedges
  • Green chutney or tamarind chutney, for dipping

🔥 Instructions

1️⃣ Prepare the Batter

  • In a bowl, whisk together chickpea flour, rice flour, turmeric, red chili powder, cumin, garam masala, salt, ginger, and ajwain seeds.
  • Gradually add water, whisking to form a smooth, thick batter (should coat the cauliflower without dripping too much).

2️⃣ Heat the Oil

  • Heat oil in a deep pan or kadai over medium-high heat. To test if it’s hot enough, drop a little batter in—if it sizzles and rises, it’s ready!

3️⃣ Coat & Fry the Cauliflower

  • Dip each cauliflower floret into the batter, making sure it’s well coated.
  • Carefully drop into the hot oil and fry in batches, turning occasionally, until golden and crispy (about 4-5 minutes).
  • Remove with a slotted spoon and drain on paper towels.

4️⃣ Serve & Enjoy!

  • Sprinkle with chaat masala and fresh coriander.
  • Serve hot with green chutney, tamarind sauce, or vegan yogurt dip.

Tips & Variations:

  • Extra Crispy Pakoras: Add a pinch of baking soda to the batter.
  • Air-Fryer Version: Lightly spray with oil and air-fry at 200°C (400°F) for 15-18 minutes, flipping halfway.
  • Make It Spicier: Add finely chopped green chilies to the batter!
