- Green chutney or tamarind chutney, for dipping

1️⃣ Prepare the Batter
- In a bowl, whisk together chickpea flour, rice flour, turmeric, red chili powder, cumin, garam masala, salt, ginger, and ajwain seeds.
- Gradually add water, whisking to form a smooth, thick batter (should coat the cauliflower without dripping too much).

- Heat oil in a deep pan or kadai over medium-high heat. To test if it’s hot enough, drop a little batter in—if it sizzles and rises, it’s ready!
3️⃣ Coat & Fry the Cauliflower
- Dip each cauliflower floret into the batter, making sure it’s well coated.
- Carefully drop into the hot oil and fry in batches, turning occasionally, until golden and crispy (about 4-5 minutes).
