🌿 Ingredients (Serves 4-6)
Batter:
- 1 cup chickpea flour (besan)
- ¼ cup rice flour (for extra crispiness)
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon cumin powder
- ½ teaspoon garam masala
- ½ teaspoon salt
- 1 teaspoon grated ginger
- ½ teaspoon carom seeds (ajwain) (optional, helps digestion)
- ¾ cup water (adjust for a smooth batter)
Frying:
- 1 small cauliflower, cut into bite-sized florets
- Oil, for deep frying (use vegetable, sunflower, or coconut oil)
For Garnish & Serving:
- Chopped coriander leaves
- Chaat masala (optional, for extra zing)
- Lemon wedges
- Green chutney or tamarind chutney, for dipping
🔥 Instructions
1️⃣ Prepare the Batter
- In a bowl, whisk together chickpea flour, rice flour, turmeric, red chili powder, cumin, garam masala, salt, ginger, and ajwain seeds.
- Gradually add water, whisking to form a smooth, thick batter (should coat the cauliflower without dripping too much).
2️⃣ Heat the Oil
- Heat oil in a deep pan or kadai over medium-high heat. To test if it’s hot enough, drop a little batter in—if it sizzles and rises, it’s ready!
3️⃣ Coat & Fry the Cauliflower
- Dip each cauliflower floret into the batter, making sure it’s well coated.
- Carefully drop into the hot oil and fry in batches, turning occasionally, until golden and crispy (about 4-5 minutes).
- Remove with a slotted spoon and drain on paper towels.
4️⃣ Serve & Enjoy!
- Sprinkle with chaat masala and fresh coriander.
- Serve hot with green chutney, tamarind sauce, or vegan yogurt dip.
✨ Tips & Variations:
- Extra Crispy Pakoras: Add a pinch of baking soda to the batter.
- Air-Fryer Version: Lightly spray with oil and air-fry at 200°C (400°F) for 15-18 minutes, flipping halfway.
- Make It Spicier: Add finely chopped green chilies to the batter!
Enjoy your gluten-free cauliflower pakoras—crispy, flavorful, and perfect for snacking! 😍✨🥦
