Ingredients:

- 2 eggs, beaten

- ½ cup diced bell pepper (optional)
- ½ cup frozen peas & carrots (optional, higher in carbs)
- 2 cloves garlic, minced
- ½ cup diced cooked chicken, shrimp, or tofu (optional for protein)
- 2 tbsp soy sauce or coconut aminos
- 1 tsp sesame oil
- ½ tsp ground ginger
- 2 green onions, chopped

Instructions:
Prepare the cauliflower:
- If using a whole cauliflower, pulse florets in a food processor until they resemble rice.
Cook the eggs:
- Heat 1 tbsp butter or coconut oil in a large skillet over medium heat.
