Beef Stroganoff is a classic Russian dish made with tender beef, onions, mushrooms, and a creamy sauce. Here’s a simple recipe to make it:

Ingredients:

  • 1 lb (450g) beef sirloin or tenderloin, cut into thin strips
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (button or cremini work well)
  • 1 cup beef broth
  • 1 tbsp Dijon mustard (optional)
  • 1 tbsp flour (optional, to thicken)
  • 1/2 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or rice (for serving)

Instructions:

  1. Prepare the Beef: Season the beef strips with salt and pepper. Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat. Add the beef and cook for 2-3 minutes, or until browned. Remove the beef from the skillet and set aside.
  2. Cook the Onions & Mushrooms: In the same skillet, add the remaining oil or butter. Add the onions and cook for 2-3 minutes until softened. Add the garlic and mushrooms, cooking for another 5 minutes until the mushrooms release their moisture and become golden.
  3. Make the Sauce: If you’d like to thicken the sauce, sprinkle the flour over the onions and mushrooms and stir for 1 minute. Add the beef broth and bring it to a simmer. Let the sauce reduce slightly for about 3-5 minutes.
  4. Add the Beef & Sour Cream: Return the beef to the pan. Stir in the sour cream and Dijon mustard (if using), and simmer for 3-4 minutes until the beef is heated through and the sauce is creamy. Season with more salt and pepper, if needed.
  5. Serve: Serve the beef stroganoff over egg noodles or rice, and garnish with fresh parsley.
