Barfi is a classic Indian sweet that is rich, fudgy, and melts in your mouth. This recipe is gluten-free and can be made dairy-free with a simple swap!

🌿 Ingredients (Makes 12-15 pieces)

Base Ingredients:

  • 2 cups milk powder (use dairy-free coconut milk powder for a vegan version)
  • ½ cup milk (or dairy-free almond/coconut milk)
  • ½ cup sugar
  • 2 tablespoons ghee (or coconut oil for dairy-free)
  • ½ teaspoon cardamom powder
  • 1 teaspoon rose water (optional)
  • A pinch of saffron (optional, for color & flavor)

For Garnish:

  • 2 tablespoons chopped pistachios or almonds
  • Edible silver leaf (varak) (optional, for a festive look)

🔥 Instructions

1️⃣ Prepare the Pan

  • Line a small tray or plate with parchment paper and grease it lightly with ghee or oil.

2️⃣ Make the Sugar Syrup

  • In a pan, heat sugar and milk over low heat until the sugar dissolves completely.
  • Add cardamom powder and rose water, stirring gently.

3️⃣ Cook the Barfi Mixture

  • Add milk powder gradually, stirring continuously to avoid lumps.
  • Add ghee (or coconut oil) and cook on low heat, stirring until the mixture thickens and starts leaving the sides of the pan (about 8-10 minutes).

4️⃣ Set & Cool

  • Pour the mixture into the prepared tray and spread it evenly with a spatula.
  • Sprinkle chopped pistachios or almonds on top and press lightly.

5️⃣ Slice & Serve

  • Let it cool completely for 30-40 minutes, then cut into squares or diamonds.
  • Decorate with edible silver leaf for a festive touch.

Tips & Variations:

  • For coconut barfi: Add ½ cup desiccated coconut.
  • For chocolate barfi: Mix in 1 tablespoon cocoa powder.
  • For a richer taste: Use condensed milk instead of sugar.
