Classic Banana Pancakes

Ingredients:

  • 1 ripe banana, mashed
  • 1 cup all-purpose flour
  • 1 tbsp sugar (optional)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk (or buttermilk)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • 1 tbsp melted butter or oil (plus more for cooking)

Instructions:

  1. Mash the banana in a bowl until smooth.
  2. In another bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Add the wet ingredients (milk, egg, vanilla, and melted butter) to the mashed banana and mix well.
  4. Gently combine the wet and dry ingredients—don’t overmix! A few lumps are okay.
  5. Heat a pan or griddle over medium heat and grease with butter or oil.
  6. Pour about ¼ cup of batter per pancake and cook until bubbles form on top (about 2 minutes). Flip and cook for another minute until golden brown.
