Apple Muffins Recipe
Ingredients:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- 2 large apples, peeled & finely chopped (about 1 ½ cups)
- ½ cup milk
- ⅓ cup vegetable oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
- In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk eggs, milk, oil, and vanilla until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined (don’t overmix!).
- Stir in the chopped apples.
- Fill muffin cups about ¾ full with the batter.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before enjoying!
