Ingredients:
For the Tofu:
- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 2 tbsp cornstarch (for crispiness)
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the Sauce:
- 1 tbsp vegan butter (or olive oil)
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for spice)
- ½ cup sun-dried tomatoes, chopped
- 1 cup canned coconut milk (or cashew cream for extra richness)
- ½ cup vegetable broth
- ¼ cup nutritional yeast (for a cheesy flavor)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 2 cups fresh spinach (optional, for extra greens)
For Serving:
- Fresh basil, for garnish
- Vegan parmesan (optional)
- Cooked pasta, rice, or mashed potatoes
Instructions:
1️⃣ Prepare the Tofu:
- Press the tofu to remove excess moisture, then cut it into cubes.
- Toss the tofu cubes with cornstarch, salt, black pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat and pan-fry the tofu until golden and crispy (about 5-7 minutes). Remove from the pan and set aside.
2️⃣ Make the Sauce:
- In the same pan, melt the vegan butter and sauté the garlic and red pepper flakes for 30 seconds.
