Ingredients:
- 1 lb (450g) beef sirloin or tenderloin, cut into thin strips
- 2 tbsp olive oil or butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced (button or cremini work well)
- 1 cup beef broth
- 1 tbsp Dijon mustard (optional)
- 1 tbsp flour (optional, to thicken)
- 1/2 cup sour cream
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Egg noodles or rice (for serving)
Instructions:
- Prepare the Beef: Season the beef strips with salt and pepper. Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat. Add the beef and cook for 2-3 minutes, or until browned. Remove the beef from the skillet and set aside.
- Cook the Onions & Mushrooms: In the same skillet, add the remaining oil or butter. Add the onions and cook for 2-3 minutes until softened. Add the garlic and mushrooms, cooking for another 5 minutes until the mushrooms release their moisture and become golden.

- Add the Beef & Sour Cream: Return the beef to the pan. Stir in the sour cream and Dijon mustard (if using), and simmer for 3-4 minutes until the beef is heated through and the sauce is creamy. Season with more salt and pepper, if needed.
