Ingredients:

  • 2 lbs beef chuck, cut into bite-sized cubes 🥩
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 4 cups beef broth
  • 2 tbsp tomato paste 🍅
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup radishes (a great low-carb potato substitute!)
  • 1 cup celery, chopped
  • 1 cup carrots, chopped (optional, slightly higher in carbs) 🥕
  • 1 cup mushrooms, sliced 🍄
  • ½ tsp xanthan gum (optional, for thickening)

Instructions:

1️⃣ Sear the beef:

  • Heat 1 tbsp olive oil in a large pot over medium-high heat.
  • Add the beef cubes and brown them on all sides (about 5 minutes).
  • Remove and set aside.

2️⃣ Sauté the aromatics:

  • In the same pot, add 1 tbsp olive oil, then sauté the onions and garlic until soft.

3️⃣ Build the flavor:

  • Stir in tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.

4️⃣ Simmer the stew:

  • Add the beef back to the pot and pour in beef broth.
  • Bring to a simmer, cover, and cook for 1 hour on low heat.

5️⃣ Add the veggies:

  • Stir in radishes, celery, mushrooms, and carrots (if using).
  • Simmer uncovered for 30 more minutes, until beef is tender and veggies are soft.
