Ingredients:

For the Strawberries:

  • 1 lb fresh strawberries (sliced)
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions:

1️⃣ Prepare the Strawberries:

  • In a bowl, mix the sliced strawberries, sugar, and lemon juice.
  • Let them sit for at least 30 minutes to release their juices (this creates a delicious syrup).

2️⃣ Make the Shortcakes:

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  • Stir in heavy cream and vanilla until the dough just comes together (don’t overmix).
  • Turn the dough onto a floured surface, gently pat it to 1-inch thickness, and cut out round biscuits using a cutter or glass.
  • Place biscuits on a baking sheet and bake for 12-15 minutes, until golden brown.

3️⃣ Make the Whipped Cream:

  • Beat heavy cream, powdered sugar, and vanilla until soft peaks form.

4️⃣ Assemble the Shortcakes:

  • Slice the biscuits in half, layer with strawberries and syrup, then top with whipped cream.
  • Add the biscuit top and finish with more berries and cream!
