Gingerbread Muffins Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp ground ginger
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp cloves (optional)
  • ½ cup brown sugar
  • ½ cup molasses
  • ½ cup butter, melted (or vegetable oil)
  • 1 large egg
  • ¾ cup milk (or buttermilk for extra moisture)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with liners or grease it.
  2. Whisk together flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves in a large bowl.
  3. In another bowl, mix brown sugar, molasses, melted butter, egg, milk, and vanilla until smooth.
  4. Gently fold wet ingredients into dry ingredients until just combined. Do not overmix!
  5. Spoon batter into muffin cups (about ¾ full).
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
