Pumpkin Waffles Recipe

Ingredients:

  • 1 ¾ cups all-purpose flour
  • 2 tbsp brown sugar
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp pumpkin spice (or a mix of nutmeg, ginger, and cloves)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • 1 ¼ cups milk
  • ¼ cup melted butter (or vegetable oil)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat waffle iron and lightly grease it.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, and pumpkin spice.
  3. In another bowl, whisk pumpkin puree, eggs, milk, melted butter, and vanilla until smooth.
  4. Gently mix wet ingredients into the dry ingredients until just combined (don’t overmix!).
  5. Cook waffles according to your waffle iron’s instructions until golden brown and crispy.
