Apple Muffins Recipe

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • 2 large apples, peeled & finely chopped (about 1 ½ cups)
  • ½ cup milk
  • ⅓ cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, milk, oil, and vanilla until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined (don’t overmix!).
  5. Stir in the chopped apples.
  6. Fill muffin cups about ¾ full with the batter.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before enjoying!

Optional Toppings:

🍯 Crumble Topping – Mix ¼ cup brown sugar, 2 tbsp flour, 2 tbsp butter, and ½ tsp cinnamon. Sprinkle on top before baking!
🧁 Glaze – Drizzle with a mix of ½ cup powdered sugar + 1 tbsp milk after baking.
