Ingredients:

  • 1 ½ cups all-purpose flour (or almond flour for keto)
  • ¾ cup sugar (or sugar substitute like erythritol)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ⅓ cup melted butter or coconut oil
  • 1 egg
  • ½ cup milk (or almond milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Mix wet ingredients: In another bowl, whisk melted butter, egg, milk, and vanilla.
  4. Combine wet and dry ingredients, stirring gently until just mixed (don’t overmix).
  5. Fold in blueberries carefully to avoid crushing them.
  6. Fill muffin cups about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
